Cellar notes
Vintage 2012 provided the perfect conditions for the production of Noble wine with a long cool summer providing a late ripening season with cool nights and clear days, allowing for a late Botrytis infection that could develop slowly throughout the autumn months. Multiple passes through four different sites was carried out selecting bunches containing Noble Botrytis which were then painstakingly dissected across the sorting table resulting in bins of delicious raisins for fermentation. The raisins were foot stomped and left to soak in their juices for 5 to 7 days before pressing off the juice and fermenting in 100% new French Damy barrels for a very long slow fermentation throughout the Winter and Spring months. Hand bottled just prior to the 2013 vintage, this first release of our Holystone Noble Sauvignon Semillon is rare example from Waiheke Island.

Tasting notes
Beautifully golden in colour with intense apricot and citrus aromas, completely decadent on the palate with a wonderful balance of intense sweetness and fresh acidity with supporting tannin and texture from the new oak barrels ensures the wine is a classic Noble wine easily enjoyed with fine cheese or citrus based desserts.
