Estate Sauvignon Blanc 2012

2012 was a very late vintage, we experienced a relatively cool summer but also an amazingly calm hot autumn. Like all of the whites in 2012, the Sauvignon Blanc and Sémillon were picked on average two weeks later than normal, producing ripe flavours at surprisingly modest sugar levels. This wine is a blend of 89% Sauvignon Blanc and 11% Sémillon. Both varieties are whole bunch pressed and taken to tank for cold settling. After 4 or 5 days of settling the wines were racked to tank for fermentation and for Sauvignon Blanc, depending on the batch, were either crystal clear or cloudy and for Sémillon, crystal clear. Following fermentation the wine from 10 vineyards were blended and bottled in the Spring.
This estate grown Waiheke Sauvignon Blanc exhibits fresh herb, nettles and gooseberry characters and contains a splash of Sémillon creating a wine that is fresh and crisp in a dry fruity style. The Sauvignon Blanc adds the pungency to the aromas and the Sémillon adds a remarkable ‘chalky’ minerality to the wine which, over time, will develop into a wonderfully toasted muesli/tropical fruit character.
